In 2003, two deep-sea trawlermen, Denis and Ger McCarthy, and their childhood friend John O'Connell, a food scientist, all from Union Hall, started making spirits as fishing came under pressure. West Cork Distillers moved in 2013 to an old brewery in Skibbereen and has grown into one of Ireland's busiest independents. Bright, fruity Irish malt. Independently owned.
