On the edge of Glenrothes, on the site of an old Fife mill, Ian Palmer founded InchDairnie in 2015 to make Lowland single malt and rye with an engineer's eye. Alongside its pot stills it installed a modern Lomond still, giving it unusual control over spirit style, and its rye, RyeLaw, appeared in 2023. Its first single malts followed in 2025. Independently owned.
