About George Dickel (Cascade Hollow)

In Cascade Hollow, a wooded fold of the Tennessee hills near Tullahoma, George Dickel has made Tennessee whisky since 1884, and spells it whisky, without the e, in the Scottish manner Dickel himself preferred. What sets it apart is the cold: before the new spirit is mellowed through thick beds of sugar-maple charcoal, the Lincoln County Process that defines Tennessee whiskey, Dickel chills it down, in the belief that winter-made whisky was always the smoothest. Owned by Diageo, it is the quieter, softer counterpoint to its more famous neighbour, a mellow, waxy, faintly minty style, and a rare and intriguing sight in a Society dominated by Scotland.
