In the old railway goods shed at St Leonards, beneath Arthur's Seat, Holyrood opened in 2019 as Edinburgh's first new distillery in nearly a century. Its gin, Height of Arrows, named after an old Gaelic name for the hill, uses a single botanical, juniper, finished with Skye sea salt and beeswax. Its whiskies explore heritage barleys and unusual yeasts. Independently owned.
