In Three Oaks, Michigan, Bill Welter, a banker who caught the distilling bug while living in Scotland, opened Journeyman in 2010 in the old Featherbone Factory of 1883, where buggy whips and corset stays were once made. The maple floors remain. Everything is certified organic and kosher, from local grains. Its rye is spicy and lively. Independently owned.
