In Waco, Chip Tate, a brewer who had interned with Jim McEwan at Bruichladdich, opened Balcones in 2008 in an old welding shop under a bridge, building much of the kit by hand, and named it after the fault line that runs through central Texas. Its single malt bears the Texan heat: big, rich and fruity, worlds away from Scotland. A larger distillery opened in 2016.
