On the Sea of Japan in Yamagata, at the foot of Mount Chōkai, Yuza was founded by Kinryu, the prefecture's only shochu maker, which decided in 2015 to turn to whisky as shochu sales fell. Distilling began in 2018 with Forsyths pot stills and Douglas fir washbacks, and it makes single malt only. Its first release came in 2022: bright, fruity and refined. Kinryu's.
