In the honey-stone country near Shipston-on-Stour, at Stourton, Daniel Szor left a career in finance to chase a simple idea: that England's Cotswolds, with its rolling barley fields, could make single malt worth taking seriously. He founded the Cotswolds Distillery in 2014, the first in the region, and filled its earliest casks that same year. The house style leans rich and fruity, built on locally grown barley, long fermentations and full bodies. Young by the measure of Scotch, it has become one of the flagbearers of the new English whisky, proof that fine single malt need not stop at the border.
